Anemic? Worried About Your Iron Levels? It may be easier than you think to keep your iron levels up. I have a cousin who was a vegan, and when she became anemic, her doctor suggested she start eating a bit of red meat. She gave in. It has always bothered me. I didn't want to disagree with her, as I have found that most people tend not to question their doctor's advice. Never mind that most physicians have not had more than one class for one semester of nutrition, and are not qualified to give nutritional advice.

It will increase the amount of iron in your dish, like chile. Then the Vitamin C from the tomatoes and peppers will better help you to better absorb the iron.
