3 vine ripened organic tomatoes, chopped finely

1/2 small fist sized organic red onion, chopped finely

1/2 cup chopped organic cilantro

2 organic jalapenos, seeded and chopped finely

1/2 to 1 teaspoon ground Chipotle powder-optional

salt to taste

Combine all the ingredients in a bowl, stir, cover. Let sit at room temperature for at least 1 hour to let the flavors mingle. Refrigerate any leftover. Keeps for up to one week.

Yield: About 3 cups
