| RAMEN NOODLE SALAD |

This salad gets lots of umm's and yumm's from the crowd! Just watch that you don't burn your nuts! (lol!) 2 bags of romaine lettuce (enough to fill a large bowl) 1 large head of broccoli, cut into bite size pieces 1/2 package of broccoli slaw 1/2 c. snow peas, cut into bite size pieces 2 packages oriental flavor Ramen noodles 1/2 stick Earth Balance margarine 1/2 sliced raw almonds 1/2 c. raw sunflower seeds 2 T. soy sauce 1 c. canola, or other neutral tasting oil of choice 1/2 c. red wine vinegar 1/2 c. organic granulated sugar 1. Melt the stick of butter in a saute pan. Add the almonds, sunflower seeds and the Ramen noodles broken up. Stir until slightly browned. Add in 1 T. of the soy sauce and half of the flavor packet from the Ramen noodle package. Let cool. 2. Mix the oil, vinegar, sugar 1 T. soy sauce, the the other half of a seasoning mix. I like to do this in an old jar so I can shake, shake, shake it up. 3. Mix the lettuce, broccoli, broccoli slaw & snow peas. Toss with half the dressing. Add the crunchy Ramen/nut mix on top. Add more dressing as needed. Tip: Any extra dressing is great for additional salads, or on steamed veggies. |
