My latest obsession is So Delicious' new Coconut Milk Kefir. First came their yogurts, which, though a bit pricey, are a delicious treat. But wow, the Kefir is thick, creamy, sweet (but not too sweet), tangy, and yet still very light. Unlike dairy kefirs, it does not leave any residual taste in your mouth. Drinking it just makes you feel like you are doing something good for yourself. Coconut milk is naturally rich in medium chain fatty acids (MCFA's). Two of these primary MCFA's, lauric and capric acid are naturally found in coconut milk. They are known for helping to support your immune system. By combining these MCFA's with ten live and active cultures, it becomes an immune boosting powerhouse. It will help to regulate your digestive system, all wrapped up in a dairy free package. You can serve it up in a glass all by itself, or dress it up as a parfait with your favorite fruit. Pour it over your choice of cereal or granola. It also makes a wickedly delish smoothie.
