Ever wondered what to do with that tempeh you bought and don't know what to make? Well here is one answer!

2-8oz. packages of tempeh

1 small sweet organic green pepper, chopped

1 small organic onion, chopped

1 cup organic ketchup

1/4 cup organic yellow mustard

1/4 cup blackstrap molasses (yummmmm)

2 T. organic brown sugar

1/4 cup organic vinegar

few dashes of Chipotle Tabasco, more if you like it spicy!!

1/2 cup filtered water

In a large frying pan, bring 1/2 inch of water to a boil. Heat the tempeh for 2 minutes on each side. Remove tempeh to strainer to cool. In a large frying pan prepared with cooking spray, saute the green onion and pepper until they are softened. Crumble in the tempeh, add the ketchup, mustard, molasses, sugar, vinegar, water and tabasco and stir to combine. Simmer over low heat until it is as thick as you want it to be. Serve on whole wheat buns. I like to add a bit of vegan coleslaw on top to zip it up a bit.Great for planned-overs for lunch or whatever!

Yield: 8-10 servings
