This is a newly "tweeked" version of my stroganoff. I hope you enjoy the yummy creaminess. My oldest son, when he saw this on the table said, "Yes! I love this stuff!" 1/2 large onion, diced 1 c. cleaned and sliced shittake mushrooms 1-8 oz. package sliced mushrooms 1/2 c. dried shittake mushrooms 1 cube beef flavored bouillon 2 c. filtered water 1/2 t. salt 2 cloves garlic, crushed non-stick cooking spray 3 T. red wine or cooking wine 1/2 t. smoked Spanish paprika 1/4 c. filtered water 1 package Gardein beef tips (optional) 3/4 - 1 cup vegan non-hydrogenated sour cream, such as Tofutti 1- 12 oz. package wide no-egg noodles Over high heat, bring a large stock pot of water to a boil. Meanwhile over medium high heat, saute the onion and mushrooms, until the juices cook away and they start to stick to the pan. Add garlic and continue to saute for 1-2 mins more. Then pour in wine, and saute until the wine cooks away. Place dried mushrooms, bouillon cube and water into a measuring cup. Heat the water in a microwave until the mushrooms are rehydrated. In my ancient, awful, microwave, it takes about 4-5 minutes. Alternatively, you could bring it to a boil on the stove and turn off until ready to add into the mushroom mixture. Add into the mushroom mixture, and bring back to a boil. turn heat to low. If using the Gardein "Beef" tips, cut each piece in half, add to prewarmed saute pan w/about one T. extra virgin olive oil. Saute only until heated through. Set aside. Add corn starch, mixed with another 1/4 c. of water, to the mushroom mixture and bring to a boil again until slightly thickened. Turn heat back to low, add the sour cream and stir until blended completely. Meanwhile, after water comes to a boil, add noodle and cook until tender or al dente. Drain, and combine in large serving bowl with sour cream mixture. Serves 4-6, depending on side dishes You can also use ground Boca crumbles instead of the Gardein, they are more easy to find. Or even better yet, add extra mushrooms and skip the faux meats. That is how I like it the best!! Enjoy! |
