This is a recipe from my childhood. It can be made in the oven, on the grill, or over an open campfire. Simple and very yummy! Easy too!

  • thinly sliced potatoes
  • thinly slice onions
  • Earth Balance Margarine
  • salt and pepper to taste

Slice as many potatoes and onions as you care to eat. Make a packet out of foil, and place potatoes and onions in the foil. Place little dime sized chunks of the margarine over the potatoes and onions. Salt and pepper to taste. Seal up packet like you are wrapping a package so that it is tightly sealed. Place on grill, campfire or in 425 degree oven. Move around packet, turning so that it cooks evenly. Check after half an hour, to see if potatoes are tender. If not, put back on heat and keep checking every ten minutes until tender enough to eat. This can be made with out the onions, if you have any onion-phobes that you are feeding.
