If you ever had the hash in a can, you will be amazed at how close this simple combination tastes to it. My hubby loves it, and my kids will eat it. It can be eaten for breakfast, lunch or dinner.
- 1 24 ounce package of Southern Style Hash Browns (the chunk kind, not shredded)
- 1 16 ounce package of ground meat substitute(such as Boca or Morningstar Farms)
- 4 tables spoons canola oil
- 1 teaspoon onion powder
Directions:
- In two separate frying pans, heat a tablespoon of oil in each pan over medium high heat. Pans are ready when a drop of water sizzles and jumps in pan.
- In one pan, place the hash browns in the oil. Drizzle two more tablespoons over the potatoes. This is important, do not touch the potatoes once they are in the pan for a long while, otherwise they will just disintegrate and turn to mush. Let them get good, brown and crispy before turning them.
- Meanwhile in the other frying pan, thoroughly warm the ground meat substitute. Once it it not frozen any longer, you can turn this pan off until the potatoes are ready.
- Once the potatoes are browned to your liking, mix in the ground meat crumbles.
- Sprinkle the onion powder over the "meat" and potato mixtureand stir in thoroughly.
- Season with salt and pepper to your preferences. Enjoy!
A variation might include using the hash brown potatoes with the peppers and onions in them already, yum, but my kids won't touch it then.
