Delicious, Nutritious, Cheap, and Can Feed An Army!

Ingredients:

  • 1 head of cabbage, sliced thin(about 1/3 in. strips)
  • 1 large onion, chopped
  • 2 T. canola, or safflower oil
  • 1 t. fine grain sea salt
  • 1 package "no egg" broad, flat noodles
  • 2 T. Earth Balance Margarine

1. Over medium high heat, saute cabbage in the 2 T. canola oil. Add salt while stirring often. You want the cabbage to soften up and cook down. A bit of brownness on the cabbage is good, it sweetens and caramelize it up a bit. Not too much brownness though. Once it has cooked down and turned translucent, you can turn the cabbage down to low. If there is any problem with sticking, you can drizzle a tablespoon or two of water to help move the cabbage around.

2. Meanwhile, bring a large pot of water to a boil. Cook noodles according to package directions. Drain in colander.

3. At this point you can combine the cabbage, noodles, and Earth balance together in a big bowl and dig in, or you can place in a crock pot on low to keep the flavors combining a bit more.
