This pudding looks really weird, but it tastes delicious! Who would have thought those little chia seeds that we made Chia Pets with as kids, were edible? Not only that, they provide superior nutrition to boot!

1/4 c. chia seeds

1 pinch of sea salt

1 heaping T. raw cacao powder

2 c. almond milk, or other milk of choice

2-3 T. raw agave nectar

In a bowl, using a wire whisk, combine all the ingredients until the raw cacao powder is mixed in thoroughly. Place in fridge for 3-4 hours, stirring once or twice. If it is too runny for you, stir in a bit more chia and let it set up for an hour. If it is too thick, stir in more almond milk. If you like it sweeter, add more agave.
