This is my husband's favorite holiday confection. And it is oh, so simple!

4 bags of vegan semi-sweet chocolate chips, I use Trader Joe's

3 cups of shelled pistachios

Prepare a jelly roll pan ( a large metal pan the has a lip going around so it doesn't ooze off the pan) by covering in parchment, wax paper will do in a pinch if you are out of parchment. In a large bowl, pour in chocolate chips. Place in microwave for 3 minutes on 50% power. Take out and stir. Place back into microwave for 2 more minutes on 50% power. Take out and stir very well again. If it is still chunky, it will probably melt as you stir it. If not microwave it for another minute or so, still on 50% power. Once it is smooth, pour in the shelled pistachios and still well again until they are all coated. Pour into prepared jelly roll pan and spread to edges evenly. Place in a cool area, or in the fridge until completely cooled and hard. Lift it out of the pan with the parchment and break it up into whatever sizes you want to. I usually just kind of drop it hard onto the table or counter (a bit fun to do!). Keep in an airtight container. Makes a great hostess gift!
