| Banana Chocolate Chip Muffins |

These are supremely tasty with a good cup o' joe. I handed my 7 year old one of these and he looked at me skeptically, but he will try anything with chocolate. He ate it in 3 bites! (Don't tell him they have fiber and are providing him a dose of Omega 3's 2 c. organic whole wheat pastry flour 1/4 c. ground flax meal 2 t. baking soda 1/2 t. salt 1 c. organic granulated sugar 1/3 c. canola oil 4 ripe bananas, mashed 1/4 c. water 1 t. vanilla extract 1 c. non-dairy semisweet chocolate chips (such as Enjoy Life Brand) 1 c. chopped walnuts, optional Preheat the oven to 350 degrees. Lightly grease the muffin tins. In a medium size bowl, mix the flour, flax meal, baking soda & salt together. In a large bowl, beat the oil and sugar together. Then add the mashed bananas, stir again until well combined. Add the water & vanilla, stir again. Add the flour mixture & chocolate chips (and nuts if using) and stir only until combined, do not over stir, it will toughen the muffins. Fill each muffin cup halfway with the batter. If you have any empty muffin cups, pour a scant 1/4 c. water into the empty cups. I read somewhere once this helps your muffins bake more evenly (I don't really know if this is true, it doesn't hurt, and it keeps the cups clean....). Bake for 20-30 minutes, until they are golden brown and a toothpick inserted into the center comes out clean. Immediately slide a knife around each muffin, and carefully remove to a cooling rack. This will keep the muffins slightly crispy around the edges. I dare you to only eat one!!!! Note: You could easily cut out 1/4 c. of the sugar if you are trying to cut back on it. Yield: 21 muffins |
