| Southern Style Sausage Gravy |

This gravy is so awesome over biscuits, toast, or english muffins. Great for a cozy brunch, lunch or even dinner! 2 T. Earth Balance Margarine 2 heaping T. organic all purpose flour 1 1/2-2 cups soy milk 1/2 package Gimme Lean Sausage, Breakfast Style spray oil for pan In a small sauce pan over medim-low heat, melt the margarine. While this is melting, over medium heat, cook the sausage, crumbling it up into as small of a chunk as you would like. After heated through and slightly browned, turn of the heat. Once the margarine is melted, stir in the flour using a wire wisk. Continue stirring for 1-2 minutes to help get rid of the "flour" taste. Pour in one cup of the soy milk, constantly stirring with the wisk. Once it begins to get seriously thick, stir in the next 1/2 cup of soy milk. Continue stirring until it thickens again. If you would like it a bit thinner, add another 1/2 cup of soymilk. It will thicken as it cools, so keep that in mind. However, you can always add more soymilk, but you can't take it out! Once you have the desired consistancy, add the sausage and stir to combine. Salt and pepper to taste. Remove from heat, and serve over biscuits, toast or english muffins. I like to add in a few red pepper flakes in mine to spice it up, but my hubby prefers his non-spicy, it is up to you. |
