1 t. organic sugar
½ c. large tapioca pearls (if you can find them, the black ones are fun!)
1 c. brewed organic black, rooibos or green tea
1 c. organic rice or soy milk (can be adjusted for taste)
1/4c. organic sugar (can be adjusted for taste)
1 c. ice cubes

- Bring 2 cups of filtered water to a boil. Stir in teaspoon of sugar and add tapioca. Cook for about 20-30 minutes, stirring to prevent pearls from sticking. Rinse, drain, and chill in refrigerator. The cooking time is an estimate, as less cooking time will result in a chewier pearl.
- Pour the tea, milk and sugar into a pitcher, and stir until everything is well mixed. Add ice cubes and stir until it is cold, pour into glasses over the tapioca pearls, and drink through fat straw, trying to suck up the tapioca pearls through the straw!
- This recipe can be easily doubled or tripled. You can use more or less pearls in each glass according to your own personal tastes.
