WARNING!!! You may want to double this recipe, these are so good, it will disappear instantly!!

1/2 medium onion, minced

2 cloves garlic, crushed

1 1/2 cups black beans (one 15oz can)

1/2 cup vegetable broth

1/2 t. cumin

1/2 t. coriander powder

1/2 t. chipotle powder

1/2 t. salt

2 t. minced fresh cilantro

1 t. freshly squeezed lime juice

1. In a large frying pan coated with cooking spray, saute the onion until translucent. Add in the garlic and saute for one more minute. Add the rest of the filling ingredients, except for the lime juice, and warm through, about 5 minutes. Using a potato masher, smash the beans until they are good and creamy. Simmer uncovered, until good and thick. Remove from heat, & stir in the lime juice. Set aside and let cool thoroughly. Enjoy with tortilla chips, or in a burrito! Yield: 1 1/2 - 2 cups
