These make a great snack and go great with refried beans. Even though they look like bananas, they cannot be eaten like a regular banana, they are NOT the same thing!! 2-3 green plantains 1/4-1/2 cup canola oil 1 pinch of salt, to taste 1. Peel plantains, and slice into 1/2 inch rounds 2. Heat a large frying pan over medium-high heat, until the oil is almost smoking. Being very careful, place the plantains into the hot oil, do not pack them in (leave a little space), and cook until light brown, about 2 minutes. 3. Carefully remove the plantains from the hot oil with a slotted spoon or spatula, and place on cutting board covered in parchment paper. Place another piece of parchment on top, along with another cutting board, then press down, firmly & evenly to flatted the plantain. It should be smooshed looking, yet still whole. 4. Using slotted spoon or spatula, place back into the hot oil until golden brown. 5. Remove pieces with the slotted spoon/spatula, and place on paper towel to drain. They should be slightly crisp. 6. Repeat until all of the rounds are cooked. Sprinkle with salt to taste, and serve. |
